- 8 ounces gluten-free macaroni or elbow pasta
- 2 tablespoons unsalted butter
- 2 tablespoons gluten-free all-purpose flour
- 2 cups whole milk
- 1 cup heavy cream
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- 2 cups shredded sharp cheddar cheese
- 1 cup grated Parmesan cheese
Instructions
- Cook the gluten-free pasta according to package instructions until al dente. Drain and set aside.
- In a large saucepan, melt butter over medium heat. Stir in gluten-free flour to form a roux, cooking for about 1 minute.
- Gradually add milk and heavy cream to the roux, whisking constantly to prevent lumps. Continue cooking until the mixture is thick and bubbly, about 5 minutes.
- Reduce heat to low. Stir in salt, pepper, paprika, and the cheeses until melted and smooth.
- Add the cooked pasta to the cheese sauce, stirring until well coated.
- Transfer the mac and cheese to a baking dish. You can optionally sprinkle with additional cheese or gluten-free breadcrumbs and bake in a preheated 375Β°F (190Β°C) oven for 20 minutes or until bubbly and golden on top.
