  • 2 cups whole milk
  • 1 cup heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 2 cups shredded sharp cheddar cheese
  • 1 cup grated Parmesan cheese

Instructions

  1. Cook the gluten-free pasta according to package instructions until al dente. Drain and set aside.
  2. In a large saucepan, melt butter over medium heat. Stir in gluten-free flour to form a roux, cooking for about 1 minute.
  3. Gradually add milk and heavy cream to the roux, whisking constantly to prevent lumps. Continue cooking until the mixture is thick and bubbly, about 5 minutes.
  4. Reduce heat to low. Stir in salt, pepper, paprika, and the cheeses until melted and smooth.
  5. Add the cooked pasta to the cheese sauce, stirring until well coated.
  6. Transfer the mac and cheese to a baking dish. You can optionally sprinkle with additional cheese or gluten-free breadcrumbs and bake in a preheated 375Β°F (190Β°C) oven for 20 minutes or until bubbly and golden on top.
